Originating from the Basque Country in northern Spain, where Casa Rural Kostoenea, our sustainable rural retreat is located. Unlike its traditional counterparts, the Burnt Basque Cheesecake defies convention with its rustic appearance and exquisite texture. Baked at high temperatures, it develops a caramelized crust that encases a velvety interior.

Its simplicity and distinctive flavour profile have made it one of the most popular desserts worldwide. The recipe is actually very simple and you can make it at home, but definitely try the original to know what you’re aiming for! It only has 5 ingredients: cream cheese, eggs, sugar, flour (cornflour for gluten free) and whipping cream.

It was created in Restaurante La Viña in San Sebastián, but can be eaten in many different establishments in the area. In summer there are long queues outside La Viña to sample this amazing dessert. However, many restaurants offer it on their dessert menu, if you don’t fancy queuing! Some delicious ones can be found at Casa 887, Cortazar and Bar Sport.
